This dish represents everything we love about modern Hungarian cuisine, traditional ingredients elevated with creative preparations and stunning presentation.

The duck liver mousse was impossibly silky and rich, clearly made with premium duck liver and expertly blended to achieve that melt-in-your-mouth texture. The elderflower jelly provided delicate floral notes that cut through the richness beautifully, while the apricot chutney added sweet-tart fruitiness and textural contrast. The toasted milk loaf arrived warm and perfectly crispy, the ideal vehicle for generous spreads of that luxurious mousse.

Duck Confit with Alpine Cheese Croquette & Purple Cabbage Puree ⭐⭐⭐

Beautifully executed traditional preparation. The duck confit was cooked to perfection, the meat was fall-apart tender and incredibly flavorful from the slow confit process, while the skin achieved that desirable crispy texture. The accompanying alpine cheese croquette was a delightful surprise, golden and crispy on the outside with molten, creamy cheese inside that added richness and textural variety.

The purple cabbage puree was smooth and earthy, providing a gorgeous color contrast on the plate while balancing the richness of both the duck and croquette. This dish showcased excellent technique and thoughtful flavor combinations, though it was slightly overshadowed by that exceptional duck liver mousse.

Pork Tenderloin Wrapped in Cured Ham with Potato Rösti, Chilled Squash Stew & Dill Oil ⭐⭐⭐⭐

Clever preparation with excellent execution. The pork tenderloin wrapped in cured ham was a smart technique, the ham added salty, savory depth while keeping the lean tenderloin moist during cooking. The meat was perfectly cooked to juicy tenderness, and the ham provided just the right amount of seasoning.

The potato rösti was golden and crispy, providing that satisfying starchy element, while the chilled squash stew offered an unexpected but welcome cool contrast to the warm protein. The dill oil added a fresh, herbal brightness that tied everything together. This was comfort food elevated with refinement, hearty yet sophisticated.
